I love eating vibrantly! These quick pickled onions turn a beautiful bright pink in just a couple of hours. Salads, tacos, wraps... add these to everything for a pop of flavour.
You'll need:
1 cup boiling water
1/2 cup white vinegar
1 tsp salt
1 tbsp sugar
1/4 tsp peppercorns
1 minced garlic clove (optional)
some Dill (optional)
How-to:
1 . Thinly slice a large red onion and add into a mason jar.
2. Mix 1 cup boiling water, 1/2 cup white vinegar, 1 tsp salt, 1 tbsp cane sugar, 1/4 tsp peppercorns, 1 minced garlic clove and dill (can omit).
3. Pour the liquid mixture over the onion and cover the jar with the lid. Mix well and let sit for a few hours in the refrigerator.
These keep for a couple of weeks in the fridge. What will you be adding these to??
