Rad Roasted Radishes

These radishes are unreal! If you tend to shy away from radishes because you find them bitter or spicy, these roasted radishes are game-changing. These are the perfect Spring side dish, packed with nutrition and a great alternative to starchy sides.


Look for the vibrant fuchsia radishes, these have the most silica! A good rule of thumb when buying produce is that the deeper in colour, the more loaded with antioxidants.


If you don’t like the bitter or spicy taste of raw radishes, roasting them makes them sweeter and milder in taste! Not only are they packed with nutrients, radishes are a great low-carb option if you want to serve up a lighter side dish.


These take no time at all! How-to:

1. Cut your radishes in quarters (I used about half a pound), toss in oil, salt, pepper and minced garlic (optional). You can use more or less radish depending on how many people you're serving.

2. Roast at 400F for 15 mins on a baking sheet lined with parchment, tossing halfway through.


I also made a Basil Tahini drizzle to add on top- it added so much flavour to this dish! To make this dressing:


1. In a blender, add in 4 tbsp tahini, 4 tbsp water, salt, pepper, juice of 1/2 lemon, a big handful of fresh basil, and 1/2 tsp maple syrup (optional). Blitz and done!


Before serving, add on some fresh cracked pepper and dried or fresh parsley on top of the radishes. Drizzle with the Basil Tahini dressing if you want to add a little extra to the dish.
