Queso!

I have the best queso dip for you to try out!



Queso is a hard one for many people to digest, so I've created a recipe that is completely dairy-free, delicious and packed with nutrition.


This dip is really versatile, and can be used as a mac+cheese sauce, a cheesy dip for chips or veggies, a cheesy sauce to add to burgers or tacos, or as part of a 7-layer dip. Use this on anything, really!


The cheesy flavour of this dip comes from nutritional yeast- it's an inactive yeast rich in many minerals and fortified with B12- an important staple if you're eating plant-based. It's an amazing product that I always have on hand. It looks like little golden flakes, and you can add it to salads, sauces and soups to give a richer, cheesier flavour. Plus, there are 10 g of protein in 2 tbsp!


You'll need:

1 large carrot

1 medium potato

1/2 cup reserved potato/carrot water

2 tbsp nutritional yeast

pinch of garlic salt, cayenne pepper, paprika, turmeric

salt, pepper to taste

1/4 tsp maple syrup

1/4 raw yellow onion

1/2 tbsp lemon juice


How-to:


1. Peel the potato and carrot, and chop. Boil them together until soft.

2. Add the potato and carrot to a blender, along with all other ingredients, and blend.

3. That's it! So easy, right?!
