This is perfect for on the go!
Try out my granola recipe to add some crunch to your yogurt bowls, with milk for breakfast, or simply snack on it throughout the day. I added oats, juicy apricots, dried cranberries, golden raisins, almonds, walnuts, cashews and spices to this mix. It's all parts crunchy, chewy, sweet, salty and full of nutrition. This is going to become a staple in your house!
You'll need:
- 2 cups quick cooking oats
-1/4 cup cashews
-1/4 cup walnuts
- 1/2 cup slivered almonds
-4 large apricots, sliced
-2 tbsp dried cranberries
-2 tbsp shredded coconut
-2 tbsp sunflower seeds
-2 tbsp melted coconut oil
-1 tsp vanilla extract
-1/4 cup maple syrup
-1 tsp salt
-1 tsp cinnamon
How-to:
In a large bowl, mix together the oats, cashews, walnuts, almonds, apricots, coconut, sunflower seeds, melted coconut oil, vanilla extract, maple syrup, salt and cinnamon. Spread flat on a baking sheet lined with parchment paper, and bake in the oven at 325F for 18-20 minutes. Flip over halfway through and add the cranberries at this point. Keep an eye on it, you'll want to take it out of the oven when it turns golden brown.
Let cool, store in a sealed container, and enjoy!
