The ultimate comfort food! This creamy mac and cheese is packed with flavour and nutrition.
Hemp seeds give this a boost of Omega 3’s, nutritional yeast adds some important B12, and there are even veggies hidden in there too. This is a good one to try for picky eaters, and is a hit for all ages. I love it! You can also use this as a cheesy dip for nachos or veggie sticks too. Give it a try and let me know what you think. It's really easy to make. If you're low-carb, swap the noodles for konjac or zucchini noodles, or simply serve the cheesy sauce over broccoli!
(Serves 2, so double or triple the recipe as needed).
You’ll need:
2 servings of your favourite pasta
1/3 cup cashews
1 medium carrot chopped (about 1 cup)
2 big tablespoons nutritional yeast
1 tbsp hemp seeds
Pinch of salt, pepper
Pinch of cayenne (can omit)
1/4 cup nut milk
1/4 cup water (add more water if too thick)
1/2 tsp garlic powder, 1 tsp onion powder
1/2 tsp apple cider vinegar
couple drops Tabasco (can omit but gives it some tang)
How-to:
1. Place cashews in a bowl,cover with boiling water and let sit for 30 mins. Drain and set aside.
2. Boil the carrot until tender, drain and set aside.
3. Blend all ingredients together, and pour onto your favourite pasta. For extra cheesiness, top the pasta + sauce with your favourite shredded cheese and heat in a pot until cheese is melted.
